 Have you ever wondered why some food decay even when properly preserved, Sometimes ago I was eating FUFU and I felt an impose of the 'WHY' coming to my mind, I sat back and began to ponder about this fact. FUFU is a popular food eaten by people if not loved by everyone but if you try it with ogbono or okro soup with dry fish, sliced ponmo and meat you will want to give it another try, but the fact is why does FUFU after been made (I mean cooked) last longer(at most one week) compared to our AMALA or even POUNDED YAM( doesn't even last more than a day). Okay we all know that FUFU is made from cassava sometimes mixed with cocoyam or plantain( I think dried), AMALA is a product of yam after being dried hmmm... Having confirmed that when we cook this two solid food preservatives are not been added like we do to our cakes or cookies, does it now mean that cassava has more capacity to last longer than yam?
